Chocolate Mousse Cake

You will need:

1 ¼ cups Unsweetened cacao powder

2 ½ cups All purpose flour

2 ½ cups Sugar

2 ½ teaspoons Baking Soda

1 ¼ teaspoons Baking powder

1 ¼ teaspoonsSalt

2 Egg & 1 yolk

1 cup Water warm

1 ¼ cups Buttermilk

½ cups & 2 teaspoons Vegetable oil

1 ½ teaspoon Vanilla extract

Chocolate mousse

16 oz Semi sweet chocolate

1 qt Heavy cream 40 %

5 Egg yolk

5 oz Hot Water


Preheat oven to 350 F .

Prepare your cake pan by cutting out a piece of parchment  paper to line the bottom of the pans .Grease the pan and place the parchment on the bottom and dust with flour the pan.

Sift together the cocoa , flour, sugar, baking soda, baking powder and salt on the mixing bowl. Add the eggs and yolk, warm water, buttermilk, oil and vanilla . Divide the batter in the pan and bake the cake for 32 – 35 minutes until a toothpick can be insterted and comes out clean. Cool on the rack for 15 minutes. Unmold the cake and refrigerate overnight .

For the Chocolate mousse, melt the chocolate over a double boiler, mix the water and yolk together and add in the chocolate, fold in whipped heavy cream. Set aside.

Cut the cake in 3 layers and pipe the chocolate mousse between and refrigerate .

Prepare the chocolate glaze, boil ¼ heavy cream and mix with 8 oz dark chocolate .

Put the cake on glaze rack and cover with the glaze, let set and cut the cake in 8 slice and decorate.
